Squash Relish

Everyone pickles cucumbers, but what do you do with extra squash? This recipe for squash relish, from Food.com, sounds like a nice bread-and-butter style treatment for squash. We have also frozen grated squash in two-cup portions—perfect for one recipe of f zucchini bread.

  • 10 cups chopped squash (mix or match)
  • 4 cups chopped onions
  • 5 -6 teaspoons salt
  • 4 cups sugar
  • 2 1/2 cups vinegar
  • 1 teaspoon nutmeg
  • 1 teaspoon dry mustard
  • 1 teaspoon turmeric (optional)
  • 1 teaspoon cornstarch
  • 1/2 teaspoon black pepper
  • 1 jar pimiento, chopped
 
  1. mix squash and onion together sprinkle with the salt and let set overnight.
  2. drain, then mix all ingredients together and boil for thirty minutes.
  3. place in jars and seal.

This recipe does not have to be hot water canned. The author at Food.com has kept it for over 2 years with no problems. However, canning in a boiling water bath for 10 minutes is a good precaution.
